Since I was a little child breaded liver schnitzel has been one of my favorite dishes and it is needless to say that the only one who was able to prepare it the way it has to be prepared was my mum. Of course, because of her experience, but I always sensed something incomparable in her dishes as if there was some kind of magic in the flavours. I learnt how to prepare the liver schnitzel from her. I'm not sure if I have magic. 🤔

Beef or pork liver
Flour
Eggs
Bread crumbs
Butter or lard
Salt

I never joke around when it comes to liver schnitzel. 😃 I strictly avoid supermarkets, because the very secret of making a delicious liver schnitzel is to get very high quality liver. For doing so I always buy it in butcher's shops that I trust or go to the farm nearby. They slice the liver for me into more or less 20x5x0.5-1 cm pieces. The pieces can be larger, the important thing is the thickness.
It is very crucial not to salt the liver before cooking, otherwise it stiffens.
Pour some flour in a flat plate, beat eggs in a deep plate (2 or 3), pour bread crumbs in another flat plate.
Dip the liver slices into the flour until both sides are completely coated, then dip into the egg, finally into the bread crumbs. You can push the crumbs on the liver slices, it helps them to stick.
In my experience and according to my mum it is better to fry schnitzels in butter or lard, otherwise they won't taste good. Schnitzels absorb too much grease. Butter and lard have more neutral flavour then oil when speaking of combining with meat. Their flavour melts together quite nicely with the flavour of the liver, meanwhile the flavour of fried oil is not pleasing at all and sticks out.
Put butter or lard in a frying pan. The butter should completely cover the liver slices. Choose medium heat. When the butter is hot put in the liver slices and cook for 3-4 minutes on each side or until cooked through. The butter tends to become black very soon, so change it often if you have more liver slices.
When breaded liver schnitzels are ready sprinkle on salt and magic. ✨ 😊
Beautiful served with salad, sauteéd vegetables or fried potatoes.
