Rebecca Louise's Teyraki Chicken


Rebecca Louise is a wonderful person. I wish you to get to know her through Social media or in person through her app. She is a fitness expert and life coach. I found her on Youtube seven years ago when she started her business. I could follow step by step how she has been growing personally and professionally and it thaught me a lot.


I love to follow her excercises for many reasons. She is motivating you as a life coach throughout the whole video. As you concentrate on what she is speaking about, you don't even notice you just completed the workout. As her motto says, "join for the workout, stay for the mindset". She is very fun, too. I literally smile and laugh while my muscles are burning. Besides, her excercises are extremely efficient. Her app is called BURN, but you find a lot of her excercises also on Social Media.


If you order her book, It takes grit, she sends you by email her cookbook full of very healthy and interesting dishes. This recipe is based on one of her's. I stirred it up, but just a little bit.


Ingredients:


2 tablespoon olive oil

1-1.5 kg Chicken pieces

1/2 cup of pineapple chunks

4-5 medium zucchinis

1 Mango

green onions, thinly sliced

pumpkin seeds (or sesame seeds)

salt and black pepper


Sauce:


1/3 cup of water

1/3 cup of soy sauce

4 tablespoon honey

4 tablespoon balsamic vinegar of Modena (or rice wine vinegar)

2 garlic cloves, minced

1/2 tablespoon grated ginger

2 tablespoon conrstarch

salt and black pepper

chiliflakes to taste


Preparation:


Chop pineapple.


Slice zucchini crosswise.


Cut mango into cubes.


Cook chicken with desired method: in the oven (I chose the oven), pan ect.


Sauté zucchini with salt and pepper. After about 3-5 minutes add in pineapples. Frizzle until desired consistency.


When finished, throw in raw mango cubes.


Separately, fry green onion until soft but still not golden.


For sauce: combine ingredients and whip.


Top chicken and side dish with sauce, fried onion and pumpkin seeds.*
